LONG overdue...

All of my avid readers, all of you few out there, I'm sorry. I haven't stopped thinking about you, its just.. well... hard when your hours are so crazy, you find time for yourself, then you work on what you want to blog about, take pictures on the nights you don't fall asleep early.. to then forget to blog. ... 

Phew.. okay so.. heres a few things we have been up to.....

My new years resolutions have a lot to do with what I have been busy doing.

and lastly.... for now at least...
somewhat of our typical dinner, quick and easy. 

Green beans, Potato, and a meat. This happens to be Pork. lol



There's plenty of other meals I have tried, including many different rice, enchilada, roll  up/ sandwiches that 
I have concocted. I really loved trying new recipes
and making my husband say over and over...

I love him for his sweet sweet encouragement!!!

too long.... I'm sorry

My dear readers,

If you are out there, i am so sorry you have been neglected. It just seems every time we want to post, or I want to post, its an hour past my bedtime, or EightyK is working on work so he can't be pulled away.

I promise we have exciting things, or pictures.

We started trying to take a pictures of EVERY MEAL i make from scratch or a recipe. Trust me, i've pulled some good ones.

AND even though there have been a few days i've fallen asleep before Picture time, we have tried to document ourselves by taking a photo of us each day. Its fun... when i'm not passed out at 9 or 10am. hehe


Also, we have now cleaned at one point every room in our house to be able to take a photo of it to post. So be prepared for a few LONG posts.

Gobble Gobble...

Say goodbye to the leftover Turkey for DAYS after Thanksgiving!!! Since my lovely husband doesn't really eat leftovers, and I am already T- 1 Sandwich ahead of him, i decided to make it with dinner.

I made..


Corn and Turkey Enchilada's!!!







There's what's left after us eating ours.
Here's the Recipe:

Inside of Enchilada:
About 1-2 cups shredded Turkey
1-2 cups of Shredded Pepperjack Cheese
1 1/2 cups frozen corn heated. ( I just put mine in water on the stove for a few.)
toss of pepper/salt
toss of Red Pepper Flakes

Mix in bowl


I used the Mission Plus Tortilla... man the Carbs are 31g and the fiber is 21g. Watch out ladies..







I rolled five enchiladas with the mixture to fit in my large cranberry casserole dish from Pampered Chef.

I put up one small can ($0.88 at Walmart) of Rotel  drained on the top of them



Then lastly, whatever was left on the sides of our Tostitos Queso Dip
 (maybe, 1/2 cup?)

Aww it was super great!!!!

"Top Chef" Chicken....

This is what was heard from Austin's mouth when he took one bite of my chicken tonight. lol.


Nothing out of the ordinary for me, spicing up our meat.. lol.

So I figured i'd share my recipe with you. Austin wanted me to post it, however we had already cut and had eaten half of our meal already, so a picture wouldn't have shown anything other than two hungry bellies.



So the menu tonight was:
Seasoned chicken with  Garlic, Herb and Wine Marinade, Homemade mashed red potatoes, Green beans with sauteed onions, one red and green apple cut in slices with my apple dip!!!

So: This is the seasoning packet :



Since I only used one large chicken breast tenderized I put it in a shaker i had around and put maybe 1/3 of the seasoning with
approx. 1tbsp White Vinegar
1 tbsp orange juice
1 tbsp lemon juice
a drizzle of Olive Oil
a shake or two of Garlic powder


I just let it soak in a tray for like, 10 minutes or so in the fridge and then cooked on my PC stone at 350 for about 10-12 minutes.

Next, my apple dip. This was actually a recipe from Pampered Chef (PC) years ago, and i just don't put nuts in it because my lovely husband who I adore, doesn't care for nuts.. ugghh


 
 
Cream Cheese( I used what i had left, about 4-5oz)
little over 1/2c Brown Sugar
Vanilla (maybe 1tbsp, I <3 Vanilla)

Whisk until all clumps are gone. Oh yeah, and softened Cream Cheese!!!

if you want to make a personal size amount, like for one small apple do:
1 oz softened Cream Cheese
1tbsp Brown Sugar
1 tsp Vanilla

: Life Changes..::

Sorry it has been so long for a "real" post. Austin and I have been quite busy, with me changing jobs, us finding a place to live, us moving and now me having one week of work down!! WOOHOO!!..

 so here are a few things from this fall starting with us going to my FIRST Bettendorf High School Football Game, and they won thank you!!!

On October 31st Jessi and Loreto were married at the Will County Courthouse!!! Here is them with the judge!!!

I have been baking and trying new techniques with the cakes i have been baking! It has surely

<3 Welcome Back to Iowa <3

It is Official...


We are on our way now this weekend to moving in to OUR NEW PLACE...TOGETHER!!! Woohoo.

It feels like it has taken months and months for this all to come together and it is finally here. We are so excited. We are moving to Davenport Iowa, and couldn't be happier. We are still struggling a little with Austin landing the job of his dreams, but God has a way of planning this and we BELIEVE something will come up soon for him. We know.

Anyway! We are so excited and can't wait for our new journey to start!!!!
